Applesauce Chicken

When DH and I first moved in together, I asked him what he favorites were to have in the fridge. He told me a "lovely" story about how he and his buddies that he lived with used to buy big jars of applesauce from Aldi's and get them ice-cold in the back of the fridge. A few days later, they would drink them like juice. Ummm, yuck? Or ummm, yum? I couldn't decide. It was genius but so "frat-boy" in nature. I decided to create something that would use the applesauce in an actual, uh, meal instead of a juice substitute. He loved it, so did I and I made it a few more times(once in the slow cooker) but I hadn't made it again. Don't remember why. Oh yeah, we had a wedding and then a kid.

A few weeks ago, I was reading a magazine and I saw a recipe similar to the applesauce chicken recipe I had created for my love! I was so happy to be reminded about that meal and immediately thought of the ingredients of my recipe. Its similar to the magazine version but you know me, it is definitely different. I will also post the slow cooker version of it at the end of the post.



4 skinless boneless chicken breasts(or chicken thighs if you are adventurous and too cool for white meat)
1 cup applesauce
1/2 cup water
small onion, sliced
1 tablespoon minced garlic
2 teaspoons apple cider or white vinegar(you know how I feel about vinegar...I heart it forever)
pinch of cinnamon(trust me...cinnamon is king)
1/2 teaspoon black pepper
pinch of red pepper flakes(this is optional...DH loves heat so I did 2 when I made it)

Pour a bit of oil in a sauté pan and sauté the onion and garlic over medium-low heat. Add the rest of the ingredients except the chicken and stir until it bubbles a bit. Add chicken pieces and cook on one side for 5 minutes and then turn over. Cover and cook for 15 minutes more or until the center is no longer pink but yummy and juicy and delicious....oh no, I'm drooling again. This is yum on top of rice or buttered noodles but I tend to just serve it with a great veggie and let the chicken stand out on its own.

Slow cooker instructions: Combine all of the ingredients into the slow cooker. Turn on low for 6 to 8 hours or high for 3 to 4 hours. I personally liked it better from the slow cooker when I made it, but Hubby loved the slight browning of the chicken from the sautéed version. If you would like a little color on the chicken, you can sear it in a pan before you put it in the slow cooker. This recipe is pretty flexible.

Amiyrah, this sounds wonderful! I'm going to add it to the list---I love the simplicity and I have 2 jars of applesauce taking up valuable real estate in the pantry. Thank you for the heads up that you posted the recipe; I really appreciate it. My brain is a tiny bit frazzled, lately.

hope the recipe works out ok for your two! Yes, it is a great way to use up that applesauce, besides using it in baking something, like my lazy mom's cookie cobbler :oP. That might be on the menu for next week since we also have a jar of applesauce taking up space (still).

OK, Amiyrah, you get bummed with us lurkers and me in particular when I don't comment enough about your more-than-yummy recipes (peachy chicken, anyone?). So here's what me is thinkin' this Monday mornin (09/01). Jmo just bought a new crockpot (3-4 person) on sale (of course) and me is goin' brown the boneless/skinless chicken breasts first. Then me is choosing WHAT flavor of organic Santa Cruz applesauce to add to it. (Would you expect anything less from this grocery hound mama?)
You're off doin' military for six days, so me has plenty of time to get back to you with feedback. Wow, this looks really yummy! I've always had applesauce on hand with baby after baby but this would be a great way to feed the whole family!
