Ritz Cookies

This is one of those "old school" recipes that grandmothers could whip up if the kiddos were coming over in 20 minutes and it was too hot to turn on the oven to bake "real" cookies. At least that's what I remember. This is one of the easiest recipes to make and if you have kiddos in the house, they can help you make this since no stove is needed. I switched up the regular recipe I remembered by using crunchy peanut butter, rather than smooth. It provides and extra crunch all round, and who doesn't love peanuts and chocolate? Huh? AND! Once you bite into one of these suckers, you get a sight like this:

Ritz Cookies

1 cup chocolate chips or chopped chocolate bars(white, milk or dark...whatever you like)
1 tub crunchy peanut butter
1 sleeve of Ritz crackers

Make the Ritz crackers into peanut butter sandwiches. If you like alot of peanut butter, butter away!
Place the sandwiches on a cookie sheet and place in the fridge while you take care of the next step.
Place the chocolate in a microwave safe bowl, and microwave for 30 second intervals, stirring after each interval, until all of the chocolate is melted(shouldn't take more than 1 minute 30 seconds total).
Take out the sandwiches, and take off the cookie sheet. Line cookie sheet with wax paper. Drop each sandwich in the chocolate and completely cover. Make sure the brush the chocolate right up the sides so it gets into the cracks between the two crackers. The best way to cover it all is to flip the cookie after you cover the sides.
Take cookie out with a fork, let chocolate drip off a bit, and place on cookie sheet.
Repeat until all are done.
Place cookie sheet in fridge until chocolate hardens back up. If you are dying to eat them, place in the freezer.

*Don't like peanut butter? Try marshmallow fluff! I finally did and it is divine!

I wonder if Nutella would make a good filler? Hmm...

nutella would be good and so would marshmallow fluff. I was just coming to add that to the recipe since I recently tried the fluff.

You know how there's sometimes just a little bit of chocolate icing left over in the tub? A Smart Spending reader said her mom would spread the icing between graham crackers, wrap and freeze. These "ice cream sandwiches" were very tasty, she said.
Wonder how that would work with Ritz?
