Meal Plan Monday!
Since I am battling a stomach flu right now, thinking up a meal plan was NOT fun. I even put it off until today to give myself some time to get over it. I'm going to roast the free turkey we got last week since I didn't get a chance to do it before Thanksgiving like I wanted. That should give us quite a few meals.
Monday: Roast Turkey with collard greens, macaroni and cheese, mashed potatoes and gravy
Tuesday: Turkey pot pie soup
Wednesday: (Imitation) Crab fried rice
Thursday: Lazy mom's tator soup(using leftover mashed potatoes)
Friday: Pizza night!
Saturday: no clue! Looks like a leftovers night
Sunday: Off to the parents house for dinner

Turkey Pot Pie soup
Tired of turkey yet? No? Well, I have a great recipe to use up some of those leftovers but in a new way. It even uses up the leftover rolls!
Turkey Pot Pie Soup
Serves 4
2 cups chopped turkey
1 cup leftover gravy
1 cup milk
1 cup leftover veggies(anything you have left from the big day)
1 teaspoon salt
1/2 teaspoon pepper
a corn starch slurry(1 tablespoon corn starch mixed with 1 tablespoon cold water)
4 rolls sliced and buttered
4 scoops of stuffing(optional)
Place the gravy and milk in a medium soup pot on medium heat and stir until it starts to bubble.
Once its bubbling, place the slurry in the pot and stir. Turn the heat to low and keep stirring until it thickens. Once thick, add in turkey, veggies, salt, and pepper. Taste for seasoning.
Place sliced and butter rolls in the toaster(or in an oven at 400 degrees) and toast until golden brown(about 5 minutes in the oven).
Place one scoop of warm stuffing in the bottom of your soup bowl. Pour the soup on top of the stuffing and place a toasted roll on top of the soup.
Enjoy!

Meal Plan Monday!
We will be traveling to a wedding the day after Thanksgiving and not returning until Sunday, so that means not al lot of cooking for this mama this week! How great is that? I do still have to worry about Monday, Tuesday and Wednesday, but I see some casseroles in our future.
Monday: Chicken and rice casserole
Tuesday: Baked Ziti
Wednesday: Chopped beef and gravy served over egg noodles with carrots noodles mixed in
Thursday: Turkey Day! I'll make a big breakfast early in the morning
Friday: Off to Boston! sandwiches for lunch in the car and yummy food at the rehearsal dinner
Saturday: Wedding day! More free food! Ha!
Sunday: Back on the road. We're staying in a suite so i'll make us a lunch for the ride back home
Dessert of the week: still eating hubby's cake I made him AND my mom made him a cake. We're drowning..

Pioneer Woman Cooks Giveaway!
There she is....the Pioneer Woman. I've never hidden my love for Ree or her site in the past, so when she let her readers know that she was releasing a cookbook, I jumped for joy. Since I am a foodie, and since I'm still a somewhat new wife and mother, I am constantly looking for cookbooks that fit my personality to fill up my collection. Ree definitely didn't disappoint. The Start of Holiday Giveaways!

Meal Plan Monday!
This is going to be a busy week! Thursday is not only Hubby's birthday, but I also have to bring a thanksgiving dish to the kiddo's school for their feast. I'm going to make my sweet potato souffle for us and to take to the school. Saturday, I'm surprising Hubby and taking him into Philadelphia to celebrate his birthday with our friends. I'm also making "special" pancakes on Tuesday and they will be part of a giveaway I'm doing in the near future! And...I have to try out the make ahead mashed potatoes again since I haven't made them in a while and it's on the list of items I have to make for our family's thanksgiving feast next week. Busy, busy, busy!
Monday: Chicken Adobo with white rice and carrots
Tuesday: Breakfast for dinner! Pancakes and scrambled eggs with turkey bacon
Wednesday: No-fry mustard tenders with yellow rice and green peas
Thursday: slow cooker beef roast with make ahead mashed potatoes and garlicky green beans

Cinnamon Apples
This is our staple side dish for the fall and winter when apples are so abundant. It reminds me of the apple side that they serve at Boston Market. Pretty much every other week you can find this in our fridge and it works as a great side dish when we don't just want veggies. How can you say no to yummy apples!
Cinnamon Apples
4 apples(peeled, cored, and sliced)
1 stick butter(or margarine)
3/4 cup sugar
1/2 tablespoon cinnamon
2 tablespoons honey
Melt the butter in a medium sized pot under low heat. In a separate bowl, place the sliced apples, the cinnamon and sugar. Toss until apples are fully coated with cinnamon and sugar. Add apple mixture to the pot with melted butter and turn to medium heat. Keep stirring the mixture so the apples are able to slowly caramelize and not burn. Once caramelized(apples will look golden brown), drizzle 2 tablespoons of honey on top of the apples and stir.

Stretching that "Rubber Chicken"
In this week's meal plan monday, I mentioned that we would be turning our roasted chicken into a "rubber chicken" to get our money's worth in meals. One of my readers, Noelle(Hi Noelle!), mentioned that she wasn't sure what size bird to get because she usually can only get 2 meals and a lunch out of her "rubber chicken."
The size of the bird is more important when it comes to the time it takes to cook it( I try to stick to 6 pounds), but the real magic trick is to allot the right amount of meat to each meal. I want to show you all how we stretch our chicken.
Day 1 dinner: Roasted Chicken with roasted potatoes, and an easy veggie.
The best way to make sure you get enough chicken this first night, without depriving your next meals of meat, is to carve only half of the chicken. I carve off one breast, one leg, one wing and whatever tidbits fall off on that side of the Chicken. I lay them all on a platter, and slice the breast right before serving. By slicing the breast, you prevent your biggest "meat eater" from grabbing the whole breast and going to town. If they have to take pieces of it, they are more likely to only grab a few pieces. Plus, they can see that there are other parts of the chicken to choose from, so they may not want to chow down on just white meat.
If you place cut up potatoes under the chicken while its roasting, you automatically get a flavored starch that will be done when your protein is done. I cheat with the veggies and just microwave some frozen ones or I buy a few carrots and roast them right under the chicken. If you can, save one small carrot for a task you're going to do later. Doing this with the carrots and potatoes tend to pay off later in the week to make another great meal.
Work After Day 1: Once dinner is done after day one, cut off the other breast and get ready to get your hands dirty! The best way to get off the rest of the meat on the chicken is to pick it all off with your hands. Don't forget to get under the chicken as well; there is some valuable meat located under there. Place your leftover carrots in a small tupperware and your leftover potatoes in another.
Once you pick all of the meat off, put the carcass into your slow cooker, along with whole peppercorns, bay leaves(2), an cut onion(I put an onion inside of the chicken before I roast it), celery(save the celery tops and place in the freezer next time you buy celery and use those!), and your cut up carrot saved from earlier. Top with about quarter of a cup of kosher salt(you need a good amount), and cover with water. Place on low and let simmer for the rest of the night. When you get up in the morning, you'll have the easiest chicken stock ever made! Strain the stock, and place in a tupperware before getting ready for your day. Once you are ready to leave for the day, it will be cool enough to put in the fridge. When you get home, you can freeze in ice cube trays, in smaller tupperware containers, or, like I like to do, use it for Day 2's meal.
Day 2: Soup and crackers or rolls. The best part about the meal in day 2 is that if you want to add chicken to the soup, you can, or you can decide to do without and still have a hearty meal because you are making it with homemade chicken stock. I have a few soups I can choose from, like mexican corn soup, and even lazy mom's tator soup. One is with meat, one is without. I also use the roasted potatoes for the tator soup, just to get even more flavor in the meal. If I have time, I'll put together a dough for homemade rolls, but if I don't, we'll eat the soup with crackers. Keep in mind that you won't need to use all of your stock for this one meal, so you will have some left over for another meal later in the week. While the soup is simmering, cook some white or brown rice to use for tomorrow's meal.
Day 3: Chicken Fried Rice! Now, if you're a regular reader of this blog, you know that my fried rice tutorial has not only gotten me out of sticky situations, but so many others have used it and realize how easy it is once you know the steps to making it the right way. Fried rice is usually a mainstay on "rubber chicken" week since I don't have to use too much meat. Keep in mind that the healthy amount of meat per person is about the size of the palm of their hand. That's all. I know, doesn't seem like a lot, and it isn't, but we Americans tend to eat too much meat in the first place. I digress, though. I like to use a cup of cubed white meat per person and half a cup of meat per child. This is still a bit too much, but we're trying to yield some leftovers here. Use the rice made yesterday, along with the rest of the goodies listed on the fried rice recipe, and follow the steps. Dinner will be done in 20 minutes, tops!
Day 4: Some type of chicken casserole. Whether you decide to to a baked casserole, or a stove top one, this is yet another easy meal that you can make in minutes. This is when I use most of the dark meat because you want the chicken flavor to infuse in all of the bland parts of the casseroles, and white meat just doesn't cut it. Plus, if you are worried about calories and fat, you don't need to use as much meat in these dishes, so a small amount of dark meat will be perfect. If I have some potatoes left over, I take a bit of white meat and a bit of dark meat, chop the potatoes even smaller, add a chopped onion, and make a chicken hash right on top of the stove. To make it even more decadent, I fill small bowls with hash and top each one with a fried egg on top. This is also the time to bring in a Mexican dinner. Tacos would be really easy, or even some chicken burritos. An enchilada bake would be great to have, and you can prep it at the end of Day 3 and just pop it into the oven when you get in the door.
Day 5: Pizza night! There should be a little bit of white meat left to use in another meal. Whether you make your own pizza or buy a frozen pizza from the store, adding that last bit of chicken to the top with a bit more shredded cheese will stretch that pizza even more!
Day 6: Another soup night. Bet you forgot all about those leftover veggies from day one, huh? Well, you could have placed them in the soup from day 2, or in the casserole from day 4, but why not make them the star in their own soup on day 6? The best is using the roasted carrots for this. All you have to do is place the carrots and about 2 cups of stock in the blender, along with some salt, pepper, and pinch of your favorite herb (curry is also yummy in this). Pulse until it looks like silky soup! Place the mixture in a soup pot and let simmer for 10 minutes. Once it's done, taste for seasonings, and add in a dollop or two of sour cream and stir slowly.
Day 7: Take the day off! Make the last day your leftovers day and take a break. You should have a good amount of leftovers by this day to let everyone fend for themselves. If you want to make it a bit more special, you can at least make a dessert, but it's so not necessary. You've done enough.
Side notes: If you need lunch meat, use half of the second chicken breast and slice thin after day 1. That should yield you lunch meat for one person for the rest of the week.
If you like more of a salad for lunch, take that same half of the breast and cube or shred it. It will make a great topping to your garden salads for the week.
When making the stock, put in a splash of vinegar into the slow cooker. The vinegar helps to bring out the calcium in the bones and makes your stock a great source of calcium for the week!

Sunny Day....
Today is the 40th anniversary of Sesame Street! How wonderful is that? I think it's awesome that a show that I watched as a baby was watched by my aunts and uncles, my little sister and cousins, and now my own child. He's an elmo fanatic and I love him for it.
Mama is a Snuffy fan. It's the mono-tone voice. It speaks to me. In the way that Eeyore makes me wanna go out into the sunshine immediately and be upbeat about EVERYTHING. Reverse psychology is awesome.
Today to celebrate, we will be watching the 40th anniversay show together and reading all of his elmo books. We'll make cookies for our own cookie monster, Daddy, and finish the night with Elmo In Grouchland.

My 20 dollar challenge!
Last night, after we filled up the truck with gas, I realized that I was down to only a 20 dollar bill in my wallet. I knew that I had to food shop the next day, and I didn't feel like taking out more money at the ATM, so I decided to give myself a challenge for the day. Get as much as I can at all of my stores for no more than 20 dollars. I knew that I could do the challenge, but I was interested in seeing what kind of transactions I'd come up with. Above, you can see everything I got! Total in the end? 18.20!! I actually had change!
I started off at Stop and Shop where I had a raincheck for butterball turkey bacon at 1.00 each. I had 4 .55/1 coupons, which, doubled up to 1.00, and gave me 4 FREE packs of turkey bacon. Score!
Next, I went to Acme and did 2 wonderful transactions. They are having a great catalina sale right now where you buy 30 dollars of certain grocery items, and get 15.00 back. The best part is that it's based on shelf or "knock down" prices and not the actual sale price. I had already done a transaction on friday, so I had 15.00 in catalinas to "roll" into these trips today. Total for the first transaction? 2.02! Total for the second transaction? 1.19!! I ended up getting 6 rolls of paper towels, cottonelle moist wipes, 16 cans of veggies, 3 boxes of kleenex, 2 bags of chocolate turtle chex mix(yum!) and 4 boxes of cheerios. I still had a 5.00 catalina left and then on top of that, got 15 more dollars in catalinas. I also learned from one of the cashiers that they sales the week before Thanksgiving are going to be pretty awesome, so I'll be able to really get my "catalina's worth" during that week.
Next, I went to walgreens where there is a great freebie of ocean spray 100% cranberry juice. You use the peelie right on the bottle, then use the 1.00 off coupon in the monthly coupon booklet, and get the 1.99 bottle for free! Unfortunately, it didn't come out to free for me. The store coupon only toof off 2 dollars instead of 3, so I had to pay .97 for all 3 bottles that I got. But, paying .32 each for 100% juice is more than fine by me.
Lastly, I went to Shop Rite. I have all the Shop Rite deals for this week posted here, but I didn't cash in on all of them. I decided to stick with the few things that I either needed or I knew would run out by the time I could get back to the store. There is also a great catalina deal on Con agra products this week, so I took advantage of that one too. I got 2 frozen pizzas, 3 bags of frozen veggies, 1 load of bread, 1 bag of flour, 4 boxes of carolina rice, 10 cans of hunt's tomato sauce, 1 FREE roll of marcal TP, 1 pint of haagen daz, 1 large perdue oven roaster, and 4 FREE packs of rayovac batteries. Total OOP? 14.02! I also got back a 3.00 catalina for buying 10 of the hunt's sauce.

I had already done a transaction on friday, so I had 15.00 in catalinas to "roll" into these trips today. Total for the first transaction? 2.02! Total for the second transaction? 1.19!! I ended up getting 6 rolls of paper towels, cottonelle moist wipes, 16 cans of veggies, 3 boxes of kleenex, 2 bags of chocolate turtle chex mix(yum!) and 4 boxes of cheerios. I still had a 5.00 catalina left and then on top of that, got 15 more dollars in catalinas. I also learned from one of the cashiers that they sales the week before Thanksgiving are going to be pretty awesome, so I'll be able to really get my "catalina's worth" during that week.
Next, I went to walgreens where there is a great freebie of ocean spray 100% cranberry juice. You use the peelie right on the bottle, then use the 1.00 off coupon in the monthly coupon booklet, and get the 1.99 bottle for free! Unfortunately, it didn't come out to free for me. The store coupon only toof off 2 dollars instead of 3, so I had to pay .97 for all 3 bottles that I got. But, paying .32 each for 100% juice is more than fine by me.
Lastly, I went to Shop Rite. I have all the Shop Rite deals for this week posted here, but I didn't cash in on all of them. I decided to stick with the few things that I either needed or I knew would run out by the time I could get back to the store. There is also a great catalina deal on Con agra products this week, so I took advantage of that one too. I got 2 frozen pizzas, 3 bags of frozen veggies, 1 load of bread, 1 bag of flour, 4 boxes of carolina rice, 10 cans of hunt's tomato sauce, 1 FREE roll of marcal TP, 1 pint of haagen daz, 1 large perdue oven roaster, and 4 FREE packs of rayovac batteries. Total OOP? 14.02! I also got back a 3.00 catalina for buying 10 of the hunt's sauce.
I love doing little challenges like this. Sometimes, when you are so frugal and you know what items you need for the week and what you can do without, you get into a shopping rut. This made me use my brain a bit more, and made shopping, a definite chore, something to enjoy just a bit. We all need a little excitement in our life sometime!

Meal Plan Monday!
This week, we're going to start the "rubber chicken" effect by roasting a chicken on monday and using it in most of my meals the rest of the week. I'm sure there will still be chicken left next week too, which means I'll have a few more meals already under my belt. I love a good roasted chicken! I'm also making my cream of chicken soup this week. I haven't made it in ages and can't wait to make it. With all the good sales on evaporated milk, I think it's finally time.
Monday: Roast Chicken with rice pilaf and green beans
Tuesday: Pasta Bake with mozzarella
Wednesday: Cream of Chicken soup with homemade dinner rolls

Friday: Pizza night!

Driving down the Cost of Motoring(Guest Post)

In today's day and age, everything seems to be getting more expensive. Well, not for me! I'm actively driving down the cost of motoring and in the last year alone, I have managed to save myself a good $600 on my motoring. But how did I do it?
Cheaper insurance
The very first thing I did was search for cheaper insurance. I was surprised to find how much I could actually save.
All I did was enter 'cheaper car insurance' into a search engine and thousands of results came up. I searched around the top 5 and looked at the prices from a few comparison sites.
The good thing with searching for cheaper insurance is that companies may well offer new customers better deals than existing ones. This is because they want to get as many people signed up as possible.
I saved a bit more money on my insurance by insuring my partner on my policy too.
Less weight in the car
Nowadays, you hear a lot about fuel economy and making sure the excess weight in your car is kept to a minimum.
So, I decided to give it a go. I went through my car and took every little bit of excess weight out that I didn't need. This included old CDs, books and bottles of water in my boot, some shoes and a few coats.
Before I made the changes to the excess weight, my car was doing around 38 miles per gallon (which is still fairly economical considering the car's size and age). However, after I made the changes, that changed to 41 miles per gallon - that's an extra 3 miles per gallon just from taking out excess weight that I didn't need in.
I was advised, though, to avoid removing my spare tyre. This would have removed a lot of excess weight in my car, but a spare tyre is something you should always have with you - you shouldn't risk driving without it. However, there are temporary spare tyres available which are considerably lighter and are used until you have it replaced.
Economical driving
The best way to save money on driving itself is to drive more economically. You may need to do some research on this because your driving style may need to change depending on the car you are driving. For me, I just had to change gear a little earlier (so I didn't 'over rev' the car) - this still saved me a fair bit of money though, and will continue to save me money in the long run.
