Now let's go on to the next giveaway! When I got this package, it had come at just the right time. I was getting so tired and not at all interested in thinking of a meal. So, when the UPS guy dropped this box off, I was more than excited!
Besides the fact that all I really needed was some chicken breast to get it started, I loved that it was a healthy version of a boxed meal kit. Good Earth products have 100% whole grain, no trans fat, no artificial flavors, no artificial preservatives and no MSG. I mean, you can't get any better than that when it comes to something that takes minutes to make. And, it's a new product that is just starting to show up in stores this month, so we should be seeing some sales(and maybe coupons?) for it soon.

So cool! The bamboo set is really nice. Hubby and I used it for one of our "date nights" where we turned some leftovers into tapas and used the little bamboo plates and cutlery. The chopping board is perfect for cutting up veigges and you can't have too many re-usable bags! This bag is sturdy and pretty big...perfect for taking to farmer's markets.

I take boneless, skinless chicken breast and sprinkle them with garlic salt, chili powder and cumin- then bake them- I just call it "Mexican Chicken"- and my kids seem to love this latest creation I've made! I usually serve it for dinner with rice and veggies and then shred up any leftover breasts and make chicken salad.

It can hardly be called a meal, but in these hot summer days we take advantage of our garden and local farm and sometimes eat nothing but fresh produce for lunch. A piece of corn, some snap peas or green beans right off the plant, some watermelon or berries. Minimal prep involved and my kids get packed with the good stuff :)

So this really isn't the best or healthiest, but I feel good about eating at Chipotle since their meat is almost all free range, and they use organic when possible.

add tuna and dressing to salad and mix. This is great because it is a one dish meal. Cool and refreshing during these humid Jersey days we've had lately.
my fave healthy meal is probably a stir fry...good way to get a lot of veggies in and easily adaptable to what is on hand or to use up bits of leftovers. and a little sweet n sour sauce drizzled on top is good. :-)

My favorite healthy meal is a big salad. I like to put lots of interesting flavors and textures in my salad. There has to be something spicy like pepperocini and something sweet like craisins or apples. Oh and for some crunch there has to be nuts or seeds. Mmmmmm!

I love to make stirfry with rice or noodles! This is an endlessly adaptable dish with a base in staples and frugal farmer's market or grocery "special" buys. I get ginger roots at a good price and freeze most of it. I do the same with neighbors' garlic and chillies. Kroger's has frozen packs of red,yellow,green sweet bell peppers and onions when that all gets too high to buy fresh. Using anything from grocery deal plain peanut butter, Amazon deal coconut oil or olive oil to sesame oil, I saute the onions garlic and ginger for a few minutes, then throw in hard veggies first. As it cooks, I may shake in some squirts of lemon or orange juice. If I have sliced or diced meat then I throw it in second. I throw in chopped up green leafies (bok choy or spinach) at the end.
Sometimes I use a scrambled egg for protein.
My favorite healthy meal is the turkey chili I make. Got the recipe from Taste of Homes healthy recipe magazine(can't remember what its called but I LOVE the magazine!) I've learned to cook from the recipes in that magazine so now most of my meals are healthy and delicious
