Meal Plan Monday!



I had to run to the store before the next storm rolls in tomorrow, so now I have a wonderful game plan for meals. Our poor freezer is getting empty! These storms are kicking my meat stockpile's butt. Gotta make meals for Hubby to take into work when he gets stuck there for 48 to 72 hours, so my main proteins are being used up in spades. We'll also use our rubber chicken agenda this week, which means I get to use my rotisserie I got for Christmas! Wahoo!

Monday: Spaghetti with meat sauce and side salad
Tuesday: Rotisserie Chicken with potatoes, onions and carrots
Wednesday: French onion soup with poor man's biscuits
Thursday: Chicken fried rice
Friday: Chicken stromboli!

Snow day activity for a couponer's kid


Since we've been having so many snow days lately, I just knew that I couldn't have Sonny just play video games or watch TV all day. Besides spending time with him coloring or playing make-believe, we did a cool activity with some of my expired coupons.

He needed to practice cutting anyway, so I figured why not make it into a game. I gave him part of an expired coupon insert and had him cut out all of the coupons. Then, I had him take out the ones that had the number 2 or the number 5 on them.  He then pasted the coupons on a piece of paper and I let him put it up on the fridge for Dad to see when he got home. He was so excited to tell him about the new game he played with mom.

Afterwards, I thought about how versatile this idea could be. If you want to focus on letters, have the kids look for the letter S(save 1.00 off), G or B(buy one get one).  Or, if you have older kids, have them cut out the coupons and tell them that you want them to save a certain amount of money on a grocery bill. Have them pull out the correct amount of coupons to reach that goal. For example, if you want to save 10.70 on an order, then they need to pull enough coupons to reach that; 2 .35/1 coupons, 4 2.00/1 coupons, etc.

I thought it was cool because it got him out of my hair for at least 15 minutes between the cutting, going through the coupons to look for the numbers, and pasting them on the paper. He also asked to do it again next "stay at home" day. I call that a win-win in the book of Mom.

2(or 3) ingedient fudge


There are many reasons why I love Hillbilly Housewife.  It got me through the the start of our frugal journey when I wanted to drastically change what we ate but didn't have the money to go crazy. I also loved the little tid bits you can find on there about how to efficiently run a frugal house. But, first and foremost, I love the recipes.  The drink mix recipes got us through a Christmas when we didn't have much money but were able to decorate mason jars full of mixes.

So, from time to time, I like to read what other viewers are sending in to the site as their favorite family recipes. This recipe for 2 ingredient fudge just blew my mind. I had the 2 ingredients on hand and it was just my luck that they were expired like a month ago! I needed to use them up fast and this didn't disappoint. I call it 2 or 3 ingredient fudge because I actually added walnuts to mine, but did make a version without nuts and it was just as divine.

2 or 3 ingredient fudge

1 bag chocolate chips
1 can frosting

Line an 8x8 or 9x13 pan with foil and lightly grease with cooking spray.
Place the chocolate chips into a microwave safe bowl and microwave for 30 seconds. Stir.
If chips aren't melted yet, microwave for 15 second intervals until they are melted.
Dump the frosting into the bowl of chocolate and stir until fully incorporated.
Pour the mixture into the lined pan and let set for at least one hour( I placed mine in the fridge because I'm impatient).
Take out of foil and cut into squares. Will last at room tempurature for up to 1 week.

The best part is that you can use whatever flavors you want! I used semi sweet chips, milk chocolate frosting and toasted walnuts in one batch and butterscotch chips and fudgy chocolate frosting in another. Chopped up dried cherries would be awesome in this too and maybe chopped apricots! Yum!

Meal Plan Monday!


With the holiday today, I feel like we are going to be off by a day on EVERYTHING, including dinners. But, I do have leftover chicken in the fridge from rosemary chicken last week, so that will start the week off with a soup. We have a bag of frozen cut up collard greens in the freezer, so I'll prepare that for our veggie of the week. I want to try a new recipe this week too, so we'll see how that goes.

Easy beer bread


I've had beer bread a few times in my life and I thought it was pretty yummy. Not as great as a dinner roll, but it was tasty. Especially with a bowl of "cream of anything" soup.  When I decided to venture into making my own version of it, I had to really think for a bit about how this recipe should turn out. I even tried to look up some recipes but the variations and frustration of them(why use yeast in a beer bread?! the beer has yeast already!) made me just scratch looking for help and figure it out myself. Baking is all about formulas, so once I realized that I already knew the formula for no-knead and regular breads, I breezed through this recipe. Here is MY VERSION of beer bread: not too sweet, crunchy, and uses the beer just like it's supposed to be used.


Easy beer bread

3 cups sifted flour
1 tablespoon baking powder
1/4 sugar
2 tablespoons melted butter or margarine
1 can or bottle of beer*
1 teaspoon garlic powder
a pinch of dried basil
a pinch of dried thyme

Preheat your oven to 375 degrees.

In a large bowl, mix together the flour, basil, thyme, garlic powder and baking powder. Then, add in the sugar and beer and stir until the whole mixture is wet.
Place in greased(or lined) muffin tins, about 3/4ths full.
Bake for 25 to 30 minutes. Pull out of the oven, baste each muffin with the melted butter, and place back in the oven for another 3 minutes.
* you can use any type of beer you want, except a dark lager. Save those for cupcakes :o)
* I made these in a muffin tin just to speed up the process, but you can make it in a loaf pan. Just lightly grease the pan and bake it for 50 minutes. Baste it with the melted butter and put back in for 3 minutes.

"Amaze-balls"

Disclaimer: This has absolutely nothing to do with being frugal, or raising kids, or couponing. It's just something that has been blowing my mind lately. Thank you for your cooperation.

I posted a status about a great movie on my Facebook page yesterday. A high school friend replied to it by saying that this certain movie was "amazeballs." Hmmm. OK. Now this wasn't the first time I heard, or seen, someone use that word, but I seriously thought it was a joke to use it. I mean, "amazeballs"? Really? But, after asking a few friends, it is supposedly the new catchphrase. I felt like maybe I should be offended by it, or at least keep it out of my own vocabulary, but as silly as it sounds, it isn't half bad.

Well, once I thought about all the other absolutely silly catchphrases, that the world, myself included, has added to pop culture I didn't feel so bad about keeping the word on the backburner. Getting Jiggy with it. Yup, we used that one. Word Up. There's another one. Whatever. Still use that one, unfortunately. Cool beans. Wow, I used that one into the ground. The ever popular OMG. Guilty. So, amazeballs? It still makes me shudder to say(or type) it but never say never.

Amazeballs....nope, still shuddering....

Really?!

I hate wasting anything, food wise. I mean, ANYTHING. If I can find a use for it, I make sure I do it right away before it goes bad or I change my mind.  Recently, during the big NJ blizzard of December 2010, my little trait became more useful than annoying.

When we leave for a trip, I always try to make sure that anything perishable is used up. Milk, sour cream, etc, are all used to the best of our ability if they are close to their expiration dates or have just a tad bit left in the container.  I do this for one main reason: you never know if you will end up stuck somewhere and can't get home to use up those odds and ends. Plus, I know that the week that we are back from a trip, I'll be at the grocery store and can replenish anything that we need.  This can also backfire on us, as I soon found out. We made it home about 3 hours after we should have been home, the night of the blizzard. We were relieved to be inside, and stay inside, for the next 2 to 3 days, but we didn't think about how empty we left the fridge and the fact that there was no way I could get my buns to a store the day after the blizzard. Plus, most stores were closed so that was that. I then had to think fast about the next few days of dinner. I scavenged through the cupboards and they weren't helping to much. Without my staples from the fridge, it seemed like it was a lost cause. Then, behind the shortening and olive oil, I saw it. A lonely box of italian salad dressing. I knew there had to be some way I could build on this.

Time was ticking; I had two kids stuck in the house, a husband stuck at work for at least 48 hours and laundry to take care of from the trip. I needed to figure this out fast and move on with my business. Unfortunately, the dressing packs were expired. Ugh! Guess what I did? I still used them. I didn't have a choice and I didn't like to waste anything. I found a few cans of tomato sauce, stirred in a packet of the dressing mix and let it simmer in the crockpot for the rest of the day. I didn't have time to fuss with chopping veggies and all that, like I usually do for my slow cooker marinara sauce. I had Dr. Seuss books to read and diapers to change.

I have to say, it turned out to be the best pasta sauce I've ever had. It was so simple to make but had a great bang of taste! I'm quite sure the expiration of the mix had no difference; I mean, it's a powder so how much of a problem could it have caused? I hate having to use my "ingenuity" when it comes to things like this. It's the Lazy Mom in me. But hey, I also hate to waste. Man, life is hard lol.
